Saffron Rice


I wanted to try this rice variety for long and finally tried. It was really tasty. A different rice variety from usual Pulao and fried rice. I just served with Punjabi rajma.

 This recipe is adapted from veg recipes of India.

Saffron Rice


Preparation time: 40 mins |Cooking time: 15 mins | Serves: 2

Ingredients


 Basmathi Rice
 1.5 Cups
 Saffron strands
 2-3 generous pinch
 Zeera
 ¾ Tsp
Bay leaves
1
Cardamom
1
Cinnamon
1 inch piece
 Turmeric
A pinch
 Cloves
1 or 2
 water
3 cups
Coriander / Mint leaves
For garnishing
Oil or Ghee
1 Tbsp
Salt
As Needed

Method

 1. Rinse and soak the rice for 30 mins.
 2. In a big pan ( i cooked the rice in pan itself), add ghee followed by Bay leaf, cloves, cardamom,cinnamon, zeera.
 3. Add the soaked rice and stir for 2- 3 mins.
 4. Crush the saffron withs hands or with mortar pestle and add it to rice.
 5. Add turmeric powder and salt.
 6. Now add the water. Cover the pan and cook till the rice are cooked. (Rice grains should be separate).
 7. Fluff it with fork.
 8. Garnish with coriander or mint leaves.
